To get Guardian Ebony Plate in Monster Hunter Wilds you must defeat Guardian Ebony Odogaren who can be found prowling around in the Ruins of Wyveria region.
Remember, Guardian Ebony Odogaron's weakest points are its two forelegs and tail, so you should aim to target these areas the most. Their Tail Tip, Head, Forelegs, and Hind Legs are all breakable too. On top of this, the tail is also severable. This all gives you plenty of options when it comes to targeting, attacking, and inflicting damage on the monster while trying to take it down.
Also remember that Guardian Ebony Odogaron is weak to Water elemental attacks, so using items like Puddle Pods in your Slinger or Water Ammo for a compatible weapon will help you inflict a lot of damage on the monster.
